Ingredients:
- 1 kg meat
- 1/4 cup sour yogurt
- 2.5 tablespoons ginger paste
- 2 tablespoons garlic paste
- 1/2 cup fried onions (Bairista)
- Salt to taste
- 3 tablespoons meat masala (Alternatively, you can use a mix of turmeric powder, chili powder, coriander powder, cumin powder, and high-quality fresh garam masala with a variety of spices)
- 1/4 cup mustard oil
- 1 hour for marinating
Instructions:
- Mix all the ingredients with the meat and marinate for 1 hour.
- In a clay pot, add about 2 tablespoons of mustard oil. Heat it slightly, then add the marinated meat into the pot. Add 5-6 whole garlic cloves and 5-6 dried red chilies. Stir it a bit.
- Use some flour to seal the pot, then place it on a coal fire. (You can buy coal in the market). If you’re cooking on a gas stove, cover the bottom of the pot with mud to prevent it from cracking.
- Place the pot on a low flame. For 1 kg of meat, it will take about 1 hour of cooking over coal.
