Vermicelli is always a favorite during Eid or any other festival, often topping the list for guest treats. Eid without vermicelli is hard to imagine, which is why today, I’m sharing some delightful vermicelli recipes to make this Eid extra special. You can prepare these delicious variations of vermicelli with your loved ones to enhance the joy of the occasion. So, let’s explore these 5 Vermicelli recipes !
Vermicelli Shonpapri
Ingredients:
- 1 packet vermicelli
- ½ cup ghee
- ½ cup sugar
- 1 cup condensed milk
- Almonds and raisins, as desired
- 2 tbsp milk powder
Method:
- Heat ghee in a non-stick pan. Break the vermicelli into small pieces and add it to the hot ghee. Stir frequently on low heat until the vermicelli turns a light golden brown.
- Once it’s golden, add sugar, condensed milk, and the almonds and raisins. Stir until it thickens and becomes sticky.
- Turn off the heat and wait until it cools to a manageable temperature.
- Grease a tray with a little ghee, spread the vermicelli mixture, and press it down to flatten. Let it set in the fridge for about an hour.
- After it firms up, cut it into small pieces and serve with milk powder for a delicious vermicelli shonpapri.
Vermicelli Cake
Ingredients:
- 1 packet vermicelli
- ½ cup oil
- 4 eggs
- 100 grams butter
- 1 cup milk
- 1 ½ cups sugar
- 2 tbsp baking powder
- Cashews and raisins, as desired
- Cherries for decoration
Method:
- Fry the vermicelli in oil until it turns light brown. Set it aside.
- Beat the eggs well, either by hand or using an egg beater. Mix in the butter, sugar, and milk, and continue beating.
- Add the fried vermicelli, baking powder, and cashews and raisins into the mixture.
- Grease a cake pan with a little oil and pour the mixture into it. Bake at 180°C (350°F) for 45 minutes.
- If you don’t have an oven, place the pan on a stovetop tava (griddle) on low heat and cover. Let it cook for about 1 hour.
- Once ready, serve the vermicelli cake with cherries on top for a delicious treat.
Vermicelli Malai Kheer
Ingredients:
- 1 ½ liters of milk
- Sugar, to taste
- ½ cup malai (cream)
- Cashews, raisins, pistachios, and almonds (½ cup each)
- 1 cup vermicelli
- Cardamom
- Cinnamon (6-7 pieces)
- 2 tbsp ghee
- A pinch of saffron
Method:
- Start by peeling and chopping the nuts. Boil 1 ½ liters of milk and reduce it by half.
- In a separate pan, heat ghee and add cardamom and cinnamon. Sauté for a moment.
- Add the chopped nuts, raisins, and vermicelli to the pan and lightly fry on low heat.
- Once it releases a fragrance, add the thickened milk and stir.
- As the vermicelli cooks, the milk will thicken. Once the vermicelli is done, add malai and saffron, and mix well.
- Turn off the heat and serve in small bowls. Let it cool in the fridge, then garnish with nuts and raisins. Enjoy the creamy vermicelli malai kheer!
Vermicelli Jorda
Ingredients:
- 1 packet vermicelli
- 2 cups sugar
- 1 cup grated coconut
- 2 tbsp raisins
- 3 tbsp roasted peanuts
- 3 pieces cinnamon
- 2 bay leaves
- 4 tbsp ghee
- 2 cups water
- Salt, to taste
Method:
- Heat a kadhai (wok) and add ghee. Once the ghee is slightly hot, add the vermicelli and fry for 10-15 minutes, stirring frequently until it turns golden.
- Add the grated coconut and stir.
- Add water and lower the heat. Let it simmer until the water evaporates.
- Add the roasted peanuts, raisins, bay leaves, and cinnamon, and cook for 10 minutes on low heat.
- Once the vermicelli becomes fluffy and dry, remove from heat and serve your delicious vermicelli jorda.
Milk Vermicelli
Ingredients:
- 200 grams vermicelli
- ½ cup sugar
- 3 cardamoms
- 3 pieces cinnamon
- 1 bay leaf
- 1 liter of milk
Method:
- Boil 1 liter of milk and reduce it by simmering.
- Add sugar, followed by cardamom, cinnamon, and bay leaf. Stir well.
- In a separate pan, fry the vermicelli until crispy, then add it to the hot milk.
- Serve your delicious milk vermicelli while it’s still warm.
