On Eid day, a variety of dishes will be cooked for lunch and dinner. If you want to try something different, Matinews presents a delicious Beef Stew recipe!

Ingredients
- ¼ cup boiled water from rosella petals (mesta)
- ¼ cup red grape juice
- 1 tbsp Worcestershire sauce
- 1 tbsp soy sauce
- 1 tbsp fish sauce
- 3 medium-sized potatoes (cut into chunks)
- 3 carrots (sliced)
- 1 celery stick (thinly sliced)
- 200g button mushrooms (quartered)
- 1.5-2 kg beef (preferably shank, patted dry)
- Salt to taste
- ½ tsp black pepper powder
- 2 cups diced onion
- ½ cup chopped garlic
- ½ cup oil
- 1 cup whole baby onions (peeled)
- 3 tbsp tomato paste
- 1 tbsp flour
- 1 tbsp cornflour
- 4 cups beef or chicken stock
- 2 bay leaves
- 1 tsp dried thyme
- 1 tsp unflavored gelatin
- ½ cup green peas
Instructions
- Prepare the Marinade:
- Mix Worcestershire sauce, soy sauce, fish sauce, rosella-infused water, and grape juice in a bowl.
- Cut the potatoes and carrots into chunks, thinly slice celery, and quarter the mushrooms.
- Season & Sear the Meat:
- Pat the beef dry with a kitchen towel.
- Rub salt and black pepper over it.
- Heat a pan and add 2 tbsp oil.
- When the oil starts smoking, sear the beef on high heat until both sides are browned.
- Remove from the pan and set aside.
- Sauté the Vegetables:
- In the same pan, add diced onions and chopped garlic.
- Add mushrooms, carrots, and potatoes, sauté lightly, and set them aside.
- Add the remaining oil to the pan.
- Add whole baby onions and sauté for a while.
- Stir in tomato paste and mix well.
- Cooking the Stew:
- Add the seared beef back into the pan and mix.
- Sprinkle flour and cornflour, stirring well to coat the beef.
- Pour in the pre-mixed sauce.
- Add stock, bay leaves, and thyme.
- Bring to a boil, then cover and simmer on low heat for 1 hour, stirring occasionally.
- Final Touches:
- When the beef is about 85% cooked, add carrots, potatoes, and mushrooms.
- Dissolve 1 tbsp gelatin in water and add to the stew.
- Stir in green peas.
- Cover and cook for another 45 minutes on low heat.
- Open the lid, check the salt, and turn off the heat.
