Beef Stew Recipe For Eid Occasion

On Eid day, a variety of dishes will be cooked for lunch and dinner. If you want to try something different, Matinews presents a delicious Beef Stew recipe!

Ingredients

  • ¼ cup boiled water from rosella petals (mesta)
  • ¼ cup red grape juice
  • 1 tbsp Worcestershire sauce
  • 1 tbsp soy sauce
  • 1 tbsp fish sauce
  • 3 medium-sized potatoes (cut into chunks)
  • 3 carrots (sliced)
  • 1 celery stick (thinly sliced)
  • 200g button mushrooms (quartered)
  • 1.5-2 kg beef (preferably shank, patted dry)
  • Salt to taste
  • ½ tsp black pepper powder
  • 2 cups diced onion
  • ½ cup chopped garlic
  • ½ cup oil
  • 1 cup whole baby onions (peeled)
  • 3 tbsp tomato paste
  • 1 tbsp flour
  • 1 tbsp cornflour
  • 4 cups beef or chicken stock
  • 2 bay leaves
  • 1 tsp dried thyme
  • 1 tsp unflavored gelatin
  • ½ cup green peas

Instructions

  1. Prepare the Marinade:
    • Mix Worcestershire sauce, soy sauce, fish sauce, rosella-infused water, and grape juice in a bowl.
    • Cut the potatoes and carrots into chunks, thinly slice celery, and quarter the mushrooms.
  2. Season & Sear the Meat:
    • Pat the beef dry with a kitchen towel.
    • Rub salt and black pepper over it.
    • Heat a pan and add 2 tbsp oil.
    • When the oil starts smoking, sear the beef on high heat until both sides are browned.
    • Remove from the pan and set aside.
  3. Sauté the Vegetables:
    • In the same pan, add diced onions and chopped garlic.
    • Add mushrooms, carrots, and potatoes, sauté lightly, and set them aside.
    • Add the remaining oil to the pan.
    • Add whole baby onions and sauté for a while.
    • Stir in tomato paste and mix well.
  4. Cooking the Stew:
    • Add the seared beef back into the pan and mix.
    • Sprinkle flour and cornflour, stirring well to coat the beef.
    • Pour in the pre-mixed sauce.
    • Add stock, bay leaves, and thyme.
    • Bring to a boil, then cover and simmer on low heat for 1 hour, stirring occasionally.
  5. Final Touches:
    • When the beef is about 85% cooked, add carrots, potatoes, and mushrooms.
    • Dissolve 1 tbsp gelatin in water and add to the stew.
    • Stir in green peas.
    • Cover and cook for another 45 minutes on low heat.
    • Open the lid, check the salt, and turn off the heat.
