Pan-Grilled Coral Fish Recipe

Ingredients

  • 700g coral fish fillet
  • ½ cup lemon juice
  • 1½ tsp sea salt
  • 1½ tsp black pepper powder
  • 50g butter
  • 1½ tbsp full cream
  • 2 tbsp chopped garlic
  • ½ tsp ghee
  • 2 tbsp olive oil
  • 1 piece of charcoal
  • 8-10 saffron strands

Instructions

  1. Prepare the Fish:
    • Wash the fish fillets and pat them dry with a kitchen towel.
    • Cut each fillet into six pieces.
    • In a wide bowl, mix 1 tbsp lemon juice, sea salt, and black pepper powder with the fillets.
    • Let them marinate for 15-20 minutes.
  2. Prepare the Sauce:
    • Heat a small pan and melt 30g butter.
    • Add saffron and the remaining lemon juice.
    • Pour in full cream and let it simmer for 2 minutes.
    • The sauce is ready.
  3. Grilling the Fish:
    • Heat a grill pan on the stove.
    • Add olive oil and the remaining 20g butter.
    • Once the butter melts, add chopped garlic and sauté for a few seconds.
    • Carefully place the marinated fish pieces on the pan over the garlic.
    • Keep the heat high and grill one side until golden brown, then flip and cook the other side.
  4. Infusing Smoky Flavor:
    • Heat a piece of charcoal on another burner until red hot.
    • Take a small foil cup, place the hot charcoal inside, and put it in the pan with the grilled fish.
    • Pour ½ tsp ghee over the charcoal to create smoke.
    • Cover the pan with a lid and let the fish absorb the smoky flavor for 5 minutes.
  5. Serving:
    • Remove the lid and transfer the fish to a serving plate.
    • Drizzle the lemon-saffron sauce over the grilled fish.
    • Serve hot and enjoy!
