Ingredients
- 700g coral fish fillet
- ½ cup lemon juice
- 1½ tsp sea salt
- 1½ tsp black pepper powder
- 50g butter
- 1½ tbsp full cream
- 2 tbsp chopped garlic
- ½ tsp ghee
- 2 tbsp olive oil
- 1 piece of charcoal
- 8-10 saffron strands
Instructions
- Prepare the Fish:
- Wash the fish fillets and pat them dry with a kitchen towel.
- Cut each fillet into six pieces.
- In a wide bowl, mix 1 tbsp lemon juice, sea salt, and black pepper powder with the fillets.
- Let them marinate for 15-20 minutes.
- Prepare the Sauce:
- Heat a small pan and melt 30g butter.
- Add saffron and the remaining lemon juice.
- Pour in full cream and let it simmer for 2 minutes.
- The sauce is ready.
- Grilling the Fish:
- Heat a grill pan on the stove.
- Add olive oil and the remaining 20g butter.
- Once the butter melts, add chopped garlic and sauté for a few seconds.
- Carefully place the marinated fish pieces on the pan over the garlic.
- Keep the heat high and grill one side until golden brown, then flip and cook the other side.
- Infusing Smoky Flavor:
- Heat a piece of charcoal on another burner until red hot.
- Take a small foil cup, place the hot charcoal inside, and put it in the pan with the grilled fish.
- Pour ½ tsp ghee over the charcoal to create smoke.
- Cover the pan with a lid and let the fish absorb the smoky flavor for 5 minutes.
- Serving:
- Remove the lid and transfer the fish to a serving plate.
- Drizzle the lemon-saffron sauce over the grilled fish.
- Serve hot and enjoy!
