Prawn & Broccoli Stir-Fry

Ingredients
  • 1 broccoli
  • 250g prawns
  • 4-5 garlic cloves (chopped)
  • 2 tbsp olive or soybean oil
  • Salt to taste
  • ½ tsp black pepper powder
  • 1 tbsp white sesame seeds
Instructions
  1. Boil the broccoli in hot water for 2-3 minutes, then drain and immerse it in cold water to retain its green color.
  2. Heat oil in a pan, sauté the chopped garlic until golden brown, then add the prawns and stir-fry.
  3. Add the broccoli, salt, and black pepper, and mix well.
  4. Cook on low heat for 2-3 minutes. Avoid overcooking to keep the broccoli crispy.
  5. Garnish with sesame seeds and serve hot.

Broccoli Cheese Balls

Ingredients
  • 1 broccoli
  • 2 boiled potatoes
  • 1 cup fried onion
  • ½ tsp chaat masala
  • 4-5 chopped green chilies
  • Salt and sugar to taste
  • Chopped coriander leaves
  • 5-6 pieces of cheese
  • 2 tsp cornflour
  • 1 cup breadcrumbs
  • Oil for frying
  • Few lettuce leaves (for serving)
Instructions
  1. Boil the broccoli and potatoes. Mash them together with fried onion, salt, sugar, green chilies, chaat masala, cornflour, and breadcrumbs.
  2. Make small balls, shape them like a cup, place a piece of cheese inside, and seal them into round balls.
  3. Heat oil in a pan and deep-fry the balls on low heat until golden brown.
  4. Arrange on a plate with lettuce leaves and serve hot.

Chicken Broccoli Stew

Ingredients
  • 1 local chicken (cut into pieces)
  • 1 broccoli
  • 3-4 potatoes
  • 1 tomato
  • 1 tsp ginger paste
  • 1 tsp garlic paste
  • 1 tsp turmeric powder
  • 1½ tsp chili powder
  • Salt to taste
  • 1 cup chopped onion
  • 1 tsp cumin paste
  • 1 tsp garam masala powder
  • ½ cup oil
  • 5-6 green chilies
  • ½ tsp roasted cumin powder
  • 2 bay leaves
  • 3 cardamoms
  • 2 cinnamon sticks
Instructions
  1. Cut and wash the chicken, potatoes, and broccoli.
  2. Heat oil in a pan, fry bay leaves, cardamoms, and cinnamon, then add chopped onions and fry until brown. Add spice pastes and salt, and sauté well.
  3. Add turmeric, chili powder, and garam masala, mix, and add 1 cup water.
  4. When the spices release oil, add chicken and potatoes and stir-fry. Add 2 cups water, cover, and cook for 20 minutes.
  5. Add broccoli and tomato, sauté slightly, then add more water and cook for another 5 minutes.
  6. Sprinkle green chilies and roasted cumin powder on top, mix, and serve hot.

Broccoli Pulao

Ingredients
  • 500g pulao rice
  • 1 broccoli
  • 1 diced carrot
  • ½ cup green peas
  • 1 tbsp ginger paste
  • 1 tsp garlic paste
  • A pinch of shahi cumin
  • 1 tbsp poppy seed paste
  • Salt to taste
  • 1 tsp sugar
  • ½ cup milk
  • 10-12 green chilies
  • ½ cup oil
  • 4 cloves
  • 4 cinnamon sticks
  • 2 bay leaves
  • 4 cardamoms
  • 3 tbsp ghee
Instructions
  1. Wash and drain the rice.
  2. Heat oil in a pan, add whole spices and bay leaves, then add the spice pastes and sauté. Add water and bring to a boil.
  3. Add rice and carrot.
  4. Once the water is absorbed, add milk, sugar, and green chilies, and cook on low heat for 5-7 minutes.
  5. Add green peas and broccoli, drizzle ghee on top, and steam for 15-20 minutes.
  6. Serve warm.

Mixed Vegetables with Broccoli

Ingredients
  • 1 broccoli
  • 2 potatoes
  • 2 carrots
  • 1 cup green peas
  • 1 tomato
  • ½ cup chopped onion
  • 7-8 green chilies
  • ½ tsp turmeric powder
  • ½ tsp chili powder
  • 1 tsp ginger & garlic paste
  • ½ cup spring onions
  • Oil and salt to taste
Instructions
  1. Cut all vegetables into small cubes and wash them.
  2. Heat oil in a pan, sauté onion and green chilies. Add spice pastes, turmeric, chili powder, and salt with a little water.
  3. Once the spices are well-cooked, add potatoes and carrots, mix, and cover until tender.
  4. Add broccoli, green peas, tomatoes, and spring onions. Stir and cover for a few minutes.
  5. Serve hot with roti or paratha.
